We live in an era of contrasts, marked by wars, climate crisis, waste, abundance, and hunger, while modern diseases generate fear and numerous substances are seen as dangerous. Scientific knowledge reaches the public in a polarized manner: discoveries about risks are often transformed into alarmist and contradictory news, as in the case of alcohol and salt, while supposed “miracle solutions” gain prominence without proper context. In this scenario, the new millennium demands an urgent change: to recover and redefine food culture, promoting sustainable systems that reconcile human and animal health with environmental preservation.
At FCNAUP, he was inspired by the professor and humanist Emílio Peres, beginning his academic career as his assistant in Human Nutrition. In the 1990s, he did community work in Brazil, focused on maternal and child nutrition. He obtained his PhD in Human Nutrition in 2001 and has researched eating behavior throughout the life cycle and the obesity-asthma phenotype. He is a Full Professor of Food and Human Nutrition and Director of the Master’s in Pediatric Nutrition at FCNAUP, a researcher at ISPUP, and a collaborator at CIAFEL.
